Anyone who knows me even remotely well, knows that I love bananas! For the last 5 or 6 years I’ve started 90% of my mornings with a banana – either mashed or chopped into a bowl of porridge, sliced between two slices of toast for ‘banana toast’ or even layered mushy banana on top of two cardboard tasting rice cakes. Bananas are probably, actually definitely, the most frequent food item found in my shopping basket.
So when my flat mates left me alone this weekend with a bowl full of over-ripe bananas, three channels of inspiration were sparked: to make some uber delicious banana bread, as well as try the banana pancakes concept I’ve heard (see end) and of course to write this absolutely awesome blog!
We all love nutrition facts to share so here are a few about bananas that you can share tomorrow morning with your colleagues while making the coffees and talking all things weekend bla bla que: ‘so I heard that bananas…’
1: Were possibly the first fruit to be farmed for commercial use, dating back to 8000 B.C.
2. Are REALLY high in potassium which is good for your heart, muscles and good cell function! If you agree with the term ‘superfood’ bananas are definitely one.
3. Are a good source of soluble fibre which helps to keep you ‘fuller for longer’ hence a perfect snack option
4. In some countries the peel is eaten as well as the flesh, either raw or cooked – it’s also a fab source of lots of vitamins and minerals!
5. Become more sugary when they ripen. If you eat less ripe bananas they have a lower GI count so the fuller feeling will last longer!
So conclusion is: bananas are healthy, nutritious and delicious!
Side note – have you heard of banana pancakes?? Try mixing up 2 eggs with one banana (best ripe) and spoon mixture onto a frying pan makes delicious banana flavoured pancakes! Serve with plain yoghurt and fruit to make it the perfect snack 🙂
